Here we are at another What I Ate Wednesday! I can't believe how insane everything has been. School has overloaded me with work before break. I'll keep this post short because I'm going to the King of Prussia Mall this weekend and am going to have a whole "what I ate while shopping" full of some yummy treats!


Breakfast was a protein poptart, which is what I usually make in the mornings. They're simple, are tons of flavor possibilities, and just plain delicious!


Can't forget to have my quest bar!


My dinner was the real highlight of the day. I was clearly in the Thanksgiving spirit already! A turkey melt on a Thomas cranberry english muffin with pineapple cottage cheese and homemade cranberry sauce and a side of maple syrup whipped sweet potatoes with almond butter drizzle. Yeah...it was as good as it sounds.

My snack was simple because I was packing, pretty full from that delicious dinner, and just didn't have much time!

What I Ate Wednesday Week 2

I can't believe it's already been another week, and another Wednesday! I have been slammed with school work since Thanksgiving is coming up as well as preparing for my competition play. We compete on Saturday, so it's crunch time! ;) There will definitely be more exciting posts and hopefully some recipes after that.
Here's some of what I ate today...

Breakfast was an apple almond yam party from Wegmans (my favorite place on earth, you'll soon see) and some sweet egg whites.


Simple salad with tuna for lunch. LOVE these packets. They are so convenient!


I ate one of my buttercup brownies too :) and might have had one when I got home...


Perky Jerky for a snack! I just recently tried this stuff and it is awesome! Low in calories + high in protein = great snack.


Dinner was a stir fry with soy crumbles, brown rice, green beans, peppers and jimaca all cooked in Brag's amino acid and garlic.


So even though I'm a little depressed that my razzle dazzle is all and my order from PB Crave didn't come yet, I still got to enjoy my nightly proyo. It was 10 times better in the jar!



I also had a chocolate peanut butter quest bar as a snack today!

Weekend Wonders and Buttercup BROWNIES!

This week was busy as usual. I had planned to do more blog posts, but I barely found a spare minute. I'll share with you some highlights of my weekend though :)

-Friday night I ran 5 miles for the first time just because! It was a great way to get rid of the stress of the week!



-For dinner I had taco soy crumbles, peppers, pumpkin harvest salsa, and pineapple cottage cheese as a salad! It was so good that I had it Saturday and Sunday too haha. You'll see that I love something and eat it all the time for a while.


-Dessert was heaven, as it was my new addiction, cake in a squash. SO...GOOOD. There are no words, really. <3


-I ended my Friday and began my Saturday with cake in a squash! This was an overflowing pumpkin cream cheese one!



-Saturday we went to my grandparent's for my grandpa's birthday and this is my quest bar dessert compared to the chocolate cake my grandma made. Ok...I might have put a little icing on my quest bar ;)


-I made brownies this weekend too!! Out of...can you guess?....BUTTERCUP SQUASH! I found the recipe on Instagram and changed it a little but all I have to say is YUM! And I will be making them again.


-I also went to target this weekend and drooled over these goodies! I only actually got the yogurt....but when Christmas rolls around they might be under the tree!

"What I Ate Wednesday" ~ Round 1

So I thought I'd do"what I ate Wednesday" since it's the first week of my blog. Here ya go, my day in food!

Breakfast tasted much better than it looked haha. I was running late so I quickly mixed egg whites with about time pumpkin spice protein, topped it with walden farms syrup, pumpkin spice peanut butter, and ate it with some pineapple cottage cheese. (My new addiction)




Lunch was a Mexican inspired salad and an apple.



I have a quest bar EVERY SINGLE DAY, so today was no different. An apple pie questie for my afternoon snack :)




Dinner was another salad with chicken, but for the dressing I mixed cottage cheese with maple pumpkin butter and bbq sauce. Yum! I also added a couple pumpkin spice almonds.




My last meal on this Wednesday was another wonderful cake in a squash. This one was red velvet and it was the best part of my entire day...no lie.



Now my belly is happy and I'm off to bed!

Finally Entering the Blog World

Well this is officially my first blog post ever!! After admiring STUFT Mama, Healthy Diva Life, The Coconut Diaries, Spoonful of Fit, and so many more....I FINALLY did it! I just began today so bear with me as I get this thing going...

This week has been a crazy one! I decided to make the huge decision to change my college major from musical theatre to nutrition and dietetics. Since the beginning of 2013, I changed to a healthy lifestyle in hopes of losing a few pounds. Months later, I've lost over 40 pounds and am an exercise and health nut! I love making new healthy recipes and am constantly on Instagram with my food.

Today began with quite possibly the BEST breakfast I could have ever imagined….S’mores Cake in a Squash. Yeah, that’s right. It was my entry for #SquashathonSaturdays on Instagram. Let’s just say I’ll be having it again and again and maybe again.

Dinner was some veggies, brown rice, and chicken cooked in Bragg's liquid aminos and topped with cheese. I kept it simple after such a treat in the morning. 

I’ll keep this post short since it’s my first one – but look for more during the week! I’ll be adding recipes and such when I have some time.
